Pizza is the best meal ever. Hands down. I think (actually I know) I could eat pizza every day of the week without growing tired of it. Hawaiian Pizza, Caprese Pizza, Buffalo Chicken Pizza…and now Chicken Pesto Pizza.
Side note: I’m watching American Idol while I’m typing this. I am NOT digging this Casey Abrams guy that everyone loves. Scotty McCreery all the way! I digress.
Anywayyyyy back the the pizza. I made my own pesto for the “pesto” portion of this pizza, but you could easily use the pre-made jarred version. If you have the chicken and crust made ahead of time, this is a super easy meal to throw together on a weekday. I pretty much always have pizza dough in the freezer (thaw in the fridge 24 hours in advance) and having shredded chicken in the fridge can save any dinner.
Chicken Pesto Pizza (makes 1 large pizza)
1/2 batch pizza dough
2/3-3/4 cup pesto
1 cup cooked chicken, shredded
1/2 cup grape tomatoes, halved
4 oz shredded Parmesan cheese
4 oz shredded mozzarella cheese
Preheat oven with pizza stone (or baking sheet) inside to 500F.
Line a baking sheet with parchment paper. Sprinkle with cornmeal. Shape pizza dough to as desired and place on baking sheet. Evenly spread pesto onto the dough with a spatula or spoon, followed by chicken, tomatoes and cheese. Bake for 12-15 minutes, or until cheese is melted and browned in spots.
