Teriyaki Burgers with Mango Pineapple Salsa

Is it obvious that we are enjoying our winter this year? We made these delicious burgers out by the pool and soaked up some sun. I’m definitely not a fan of sweet fruit with meat, but for some reason this just works. You could easily change out the homemade Teriyaki sauce with bottled if you don’t have the ingredients on hand. The homemade Teriyaki is delicious, but it takes on a totally different flavor to bottled. It’s up to you to decide if that’s a good thing or a bad thing- I thought it was an improvement on it’s bottled counterpart. The salsa recipe made a lot more than needed, but you can always have leftovers with tortilla chips!

Also, I feel the need to say it- GO PACKERS! SUPER BOWL CHAMPS!!!!!

Teriyaki Burgers with Mango Pineapple Salsa (serves 4)
Ingredients:

For the salsa:

1 mango, diced
1 1/2 cup fresh pineapple, diced
1/2 of a red bell pepper, diced
1/4 cup red onion, diced
1 Tbs cilantro, minced
juice from one lime
Pinch of salt

Lightly toss all ingredients in a large bowl. Cover and refrigerate while assembling burgers and sauce.

For the Teriyaki sauce:
1/2 cup pineapple, diced
1/4 cup soy sauce
1/2 inch piece of ginger, minced or grated
1 1/2 Tbs brown sugar
1 clove garlic, minced
1/4 tsp rice vinegar (I think I threw in a couple of extra dashes because I like things tangy)
1/4 tsp sesame oil
1/2 Tbs cornstarch
1/2 Tbs cold water

Combine pineapple, soy sauce, ginger, brown sugar, garlic, vinegar and sesame oil in a blender or food processor. Pulse until smooth. Transfer sauce to a small saucepan and heat until bubbly. In a small bowl combine cold water and corn starch, and then add the mixture to the sauce. Stir until sauce is thick and bubbly. Remove from heat and set aside.

For the burgers:
1 egg, slightly beaten
Tsp seasoning salt
Tbs Worcestershire sauce sauce
1 1/2 lb. ground beef
4 burger buns
lettuce

In a small bowl, beat together egg, seasoning salt and Worcestershire sauce. Put ground beef in a large bowl and slowly add Worcestershire sauce mix as need. You don’t want the burgers to be too sloppy, but you want to add enough for them to remain cohesive. Press burgers with a burger press. Grill burgers and buns to your preference.

To assemble, place a burger patty on each bun bottom. Top with Teriyaki, salsa and lettuce.
