Peach Sangria

January weather is my kind of summer. I much prefer 75 degrees over 110 degrees. I mean, who wouldn’t? In Arizona you have to take advantage of the “winter weather” and enjoy the outdoors before it gets hot again. James and I are making a point to spend more time outside while the weather is so nice. This weekend we went to the pool, books in hand (mine was a cookbook) and drank this delicious concoction of peach puree, peach schnapps and white wine. Even if you don’t live in a warm-weather state, you should probably mix this up anyway, throw on your swimsuit and sit under a heat lamp. It’s good for the soul!

Peach Sangria (serves 4-6)
Ingredients:

1 lb ripe peaches, peeled, pitted and sliced
6 Tbs peach schnapps
2 bottles of white wine
1 tablespoon simple syrup, optional (simple syrup is just equal parts water and sugar. To make, just heat water for 30 seconds in the microwave and dissolve sugar into the water)
Ice, for serving
Orange slices, for garnish

In a blender, puree peach slices until smooth. Add peach schnapps, 2 cups of wine and simple syrup to the blender. Pulse 3 or 4 times or until the mixture is well combined. Chill the peach mixture in the fridge for at least 2 hours.

To serve, fill each glass half full with peach mixture, then top with chilled wine. Add ice cubes and garnish with orange slices if desired.
