Banana and Peanut Butter “Ice Cream”

Hello wonderfully creamy, low-fat, low-calorie treat made from only frozen bananas and peanut butter! Honestly, I can’t believe I didn’t think of this on my own. I was already using frozen bananas in smoothies to make them thick and creamy, without having to use milk, yogurt or even ice. When blended, frozen bananas turn into an almost soft-serve-like consistency, which is kind of amazing. They also make a great canvas for adding extra flavor, whether it’s additional fruit or peanut butter. You can also add cocoa powder if you’d like, or experiment with other flavorings. You may have to pop the ice cream in the freezer after mixing if you think its becoming too melted with the addition of extra ingredients. I only added peanut butter and mine was the perfect consistency for immediate consumption. :)

Banana and Peanut Butter “Ice Cream” (serves 1-2)
Ingredients:

2 ripe or slightly over-ripe bananas
2 spoonfuls peanut butter
Chocolate chips, for garnish (if desired)

Cover a baking sheet with parchment paper. Slice bananas into ¼ inch slices and lay in a single layer on the baking sheet. Freeze for 2 hours. Put bananas in a blender or food processor and pulse until bananas resemble soft serve. You may have to scrap down the sides of the blender or food processor a few times, but mine came together quickly and with little scraping. Add peanut butter and pulse a few more times to combine. Serve immediately with chocolate chips.

    Seriously?!?? I’ve been putting PB + sliced banana in my oatmeal to start my day for a month or so now; I never seem to get tired of it. And now you’ve shown me the perfect way to end my day as well! <3
