Mini Blueberry Pancake Muffins

Sometimes making pancakes can be a bit of a project, especially if you’re like us- with only a frying pan. I can only make 2 pancakes at a time, and I have to keep the rest warm in the oven. These little muffins are the perfect alternative to a traditional pancake and the best part is you can make them all in one batch. It only takes 10 minutes!


Mini Blueberry Pancake Muffins
(makes 24 mini muffins)
Ingredients:

1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 Tbs sugar
2/3 cup buttermilk
1 egg
2 Tbs pure maple syrup
2 Tbs melted butter
frozen blueberries

Preheat oven to 350F. Spray 24 mini muffin wells (2-12 count pans, or 1-24 count pan) with cooking spray. Set aside.

Combine flour, baking powder, baking soda, salt, and sugar in a bowl. Mix well. In a separate bowl, mix buttermilk, egg, maple syrup and melted butter until just combined. Mix together dry ingredients with wet ingredients until just combined.

Pour batter into 24 mini muffin pans. Add in blueberries individually as desired.

Bake for 10 minutes, or until muffins are cooked through. Let cool slightly and serve with maple syrup.
