Meatball Subs

I always thought it was disgusting when people ordered meatball subs from Subway. Perhaps this is because I hate Subway, but I think it was also the fact of how odd putting meatballs on bread sounds. I’m not sure why I thought it was gross, but I did. Well about a month ago I got the idea to make meatball subs for a lunch after we had spaghetti and meatballs for dinner. To my surprise, I really enjoyed them! I’ve now made them again, this time for dinner with a side of Caeser salad. They also made a great (easy) leftover lunch the next day.

Meatball Subs
Ingredients:
1 lb lean ground beef
1/3 cup italian bread crumbs
1/2 tsp italian seasoning
1/4 tsp cayenne pepper
1 egg, beaten
1 jar pasta sauce (I used Classico Ripe Olive and Mushroom)
4-6 hoagie rolls
shredded mozzarella cheese

Preheat oven to 350F. Line a baking sheet with aluminum foil and spray lightly with cooking spray.

Combine all ingredients in a mixing bowl. Shape into 15-18 balls and place about 1 inch about on baking sheet. Bake for 15 minutes, flip meatballs, and bake for 7 minutes more. Take meatballs out of the oven and leave oven on. Place meatballs into a sauce pan and pour pasta sauce over them. Stir carefully and simmer on medium heat for roughly 10 minutes.

Slice hoagie rolls and place several meatballs on the bread. Top with mozzarella cheese. Place subs on a baking sheet and bake for 5 minutes, or until cheese is melted.
