Hot Onion Dip

If I could rename this recipe I think I would call it onion souffle because it’s so light and fluffy. I easily halved the recipe, which made about 2.5 cups of dip. The recipe is written in the halved version. If you are only sharing between 4-6 people it’s definitely enough. I served it with pita chips and mini pieces of toast made from Trader Joe’s bread. It was very good and I would definitely make it again!
For all the onion haters, it’s not overly oniony so you may actually like it. :)

Hot Onion Dip (serves 4-6, appetizer portions)
Ingredients:

1/2 large onion, finely chopped
1 Tbs butter
12 oz cream cheese, softened
1/4 cup mayonnaise
1/4 tsp red pepper flakes
1 cup shredded Parmesan cheese

Saute onions in butter over medium heat until soft and golden brown. In the meantime, preheat the oven to 400F.

In a mixing bowl combine cream cheese, mayo, red pepper flakes and Parmesan cheese. Stir in onions. Place the dip into oven safe ramekins or a small oven safe dish. Bake for 30 minutes and serve hot.
