
I love avocados. I mean I REALLY love avocados, therefore by default I love guacamole too. This recipe is spicy (even to spice-proof James) so adjust the cayenne pepper if you don’t like spicy food. Cayenne also makes the guacamole look a bit reddish/brown in color, even when it hasn’t oxidized. The only thing that was missing from today’s Sunday football dip was a side of margaritas!
Spicy Guacamole (serves 3-4)
Ingredients:
3 avocados, pit removed and diced small
1 lime
1/2 tsp kosher salt
1/2 tsp ground cumin
1/2 tsp cayenne pepper
1/2 medium onion, finely diced
2 Roma tomatoes, seeded and diced
1 Tbs chopped cilantro
1 clove garlic, minced
In a bowl mash avocados and mix in the juice of one lime. Add salt, cumin and cayenne pepper. Mix well. Carefully mix in onions, cilantro, garlic and tomatoes. Cover with plastic wrap (with plastic touching the dip) and let sit for at least 30 minutes before serving.

This was good but not at all spicy to me. I added diced jalapeno, doubled the cayenne and added some crushed red pepper and that kicked up the heat level a bit. But this is a great recipe, just rather mildly spicy without the additions.
