Night Off

So, we don’t always cook at home. Sometimes we cave and get delicious food like In N Out. I’m not complaining… Note: I only got a hamburger. This was James’!

Apple Crumble

Mmm…cinnamon, brown sugar, butter and apples. The house smells sooo good when you make this recipe! To me, it’s better than apple pie (I’m serious) and a tenth of the work. Top with some vanilla bean ice cream and you have a heavenly dessert in a snap. Apple Crumble Ingredients: Apples: 3 apples, peeled and chopped (any variety really, IRead more

Oven Fries

We made turkey burgers again (big surprise) and oven fries for a side. This is definitely the best recipe I’ve used for oven fries. They are crispy on the outside and really fluffy on the inside. Highly suggested! Oven Fries (serves 2-3) Ingredients: 2 large russet potatoes or 3 smaller russet potatoes, cut into wedges 5 tablespoons oil, divided saltRead more

Bacon & Tomato Pasta

In considered adding a “bacon” category tonight, but the thought of most of our meals fitting into that category kind of makes me sick! I adapted this recipe from Guy Fieri. As always, I made it for the first time exactly as stated, but it’s slowly morphed into an easier, less fuss meal. Bacon & Tomato Pasta (serves 2-4) Ingredients:Read more

Cilantro Lime Chicken Tacos

While I was making this recipe I intended on spicing the chicken with more than just salt and pepper, however, I decided to make the lime and cilantro stand out more and omitted additional spices. These tacos were really light compared to a normal taco. Cilantro Lime Chicken Tacos (serves 2) Ingredients: 1 large chicken breast pounded thin for evenRead more

Spinach Artichoke Dip

In honor of football Sundays, I’m going to try to make a different dip for the next 20+ weeks of NFL games. Here is week 1! If you have any dip ideas, please share. I do have enough for all 20 weeks, but I’d love to get other ideas too! Spinach Artichoke Dip Ingredients: 1 cup thawed, chopped frozen spinachRead more

Chicken Souvlaki & Greek Salad

I’m sure anyone that’s from Greece would cringe at my attempt to make “Greek Food”. I am well aware that a true greek salad does not actually have lettuce, but this is more my take on Greek than anything authentic. I would describe this meal as fresh. I hope you enjoy! Chicken Souvlaki Skewers (makes approx 4-5 skewers) Ingredients: 1Read more

Spinach Crepes

This is the perfect lunch to make over a lunch hour, because it only takes a matter of minutes to prepare. It’s made with spinach, ricotta cheese, pepperoni and parmesan cheese. Crepes can be either savory or sweet based on the fillings and topping you use. Although I liked these, I still prefer sweet nutella crepes! Spinach Crepes (makes 2Read more

Black Bean Burritos

So it’s clearly impossible to take an appetizing picture of a burrito, but I gave it my best attempt. This is a vegetarian burrito (highly unusual for us to have a meatless meal), but it packs in flavor. The only thing I would change is the addition of more cheese, but I always think that more cheese is necessary. BlackRead more

The Great Pumpkin Hunt

So I heard that there was a “pumpkin shortage” from last year, however, I didn’t understand that it means there is virtually no pumpkin to be found anywhere. Whole Foods came in for the win this time. Perhaps the organic pumpkin crop was big enough last season?
