I felt like chocolate after dinner tonight so I made little chocolate lava cakes for dessert. It’s a chocolate cake with a gooey chocolate center (I guess that’s the lava part!). The best part about them is you can easily make just 2 at a time- just cut the recipe in thirds. Enjoy!
Lava Cakes (serves 6)
Ingredients:
Filling:
3/4 cup semi-sweet chocolate chips
2 tbsp heavy cream
Melt together chocolate and cream in the microwave, about 30 seconds. Put mix in the refrigerator for 45 minutes until firm. You can speed it up by freezing it, but make sure it doesn’t get too hard.
Cakes:
1 cup semi-sweet chocolate chips
3/4 cup butter
3 eggs
3 egg yolks
1/3 cup sugar
1 1/2 tsp vanilla
1/3 cup flour
3 tbs cocoa powder
Preheat oven to 400F. Melt butter and chocolate chips in the microwave, about 45 seconds. Let cool. In a mixing bowl cream together eggs, sugar and vanilla. Add cooled chocolate mixture and beat with an electric mixer until combined. Sift in flour and cocoa powder and beat until just combined.
Take firm chocolate/cream mixture out of the refrigerator and form into 6 equal size balls. Pour 1/3 cup of cake batter into 6 ramekins. Place a chocolate ball in each ramekin on top of the cake batter. Divide the remaining batter between the ramekins, covering the chocolate balls. Bake for 13-15 minutes, or until the edges of the cake are firm. Serve hot with ice cream and a sprinkling of powdered sugar.
