
Sound familiar? I heard an advertisement on the radio for Paradise Bakery’s Fuji apple salad. They listed the ingredients and I immediately knew I had to recreate the recipe. Although I’ve never had their version (I hear it’s good), I can say that this was excellent! James really liked the Gorgonzola cheese and I enjoyed the fresh apples in the salad. The Paradise version has apple chips but I’m not a fan so I subbed real Fuji apples instead. We had our salad with fresh french baguette and olive oil/vinegar. I will definitely be making this again soon!
Fuji Apple Salad (serves 2+)
Ingredients:
8 oz mixed greens
1/2 red onion, diced
1 large tomato, diced
chopped pecans, as many as you like
Gorgonzola cheese, as much as you like
1 Fuji apple, chopped right before serving
1 grilled chicken breast, diced
apple vinaigrette (recipe below)
Mix all ingredients above in large bowl and toss with vinaigrette.

Apple White Balsamic Vinaigrette
Ingredients:
4 tbs apple juice concentrate
1 tbs apple cider vinegar
1 tbs white balsamic vinegar
dab of dijon mustard
1/4 tsp garlic powder
1/3 cup olive oil
Whisk together all ingredients and serve immediately.
