Chicken Souvlaki & Greek Salad

I’m sure anyone that’s from Greece would cringe at my attempt to make “Greek Food”. I am well aware that a true greek salad does not actually have lettuce, but this is more my take on Greek than anything authentic.

I would describe this meal as fresh. I hope you enjoy!

Chicken Souvlaki Skewers (makes approx 4-5 skewers)

1 to 1 1/2 breasts of chicken
1 large zucchini, cut into 1 inch sections
3 tablespoons lemon juice
1/2 tsp dried oregano
2 tsp olive oil
2 cloves of garlic, minced

Cut chicken breast into 1 1/2 inch squares, or desired size. In a ziplock bag mix together lemon juice, oregano, olive oil and garlic. Add chicken, close bag and mix around well. Let chill in refrigerator for 30 minutes.

Preheat grill to medium-high.

Place chicken and zucchini alternately on skewer. Grill until cooked thoroughly.

Greek Salad

romaine lettuce
red onion, thinly sliced
cucumber, diced
tomato, diced
feta cheese
kalamata olives, pitted
red wine vinaigrette (see recipe below)

Mix all ingredients in large bowl and serve with souvlaki.

Red Wine Vinaigrette (Serves 2)

4 tablespoons olive oil
4 tablespoons plus 2 tsp red wine vinegar
dab of dijon mustard (about a 1/2 tsp)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
1/2 tsp basil

Mix all ingredients well and pour over salad.
