Black Bean Burritos

So it’s clearly impossible to take an appetizing picture of a burrito, but I gave it my best attempt.

This is a vegetarian burrito (highly unusual for us to have a meatless meal), but it packs in flavor. The only thing I would change is the addition of more cheese, but I always think that more cheese is necessary.

Black Bean Burritos (serves 2-3)
Ingredients:

2-3 burrito sized tortillas
1/2 green bell pepper, finely chopped
1/2 onion, finely chopped
1 1/2 tbs vegetable oil
1- 15 oz can of black beans, drained and rinsed
1 tsp garlic powder
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
3 oz cream cheese
rice (optional)
mexican cheese, for topping
salsa, for topping
sour cream, for topping

Saute peppers and onions in oil until soft. Mix in black beans and spices. Heat through, about 3 minutes. Add in cream cheese and stir until well blended. Assemble burritos with rice and bean mixture. Grill wrapped burritos in a skillet until light brown and top with cheese, salsa and sour cream.
