In considered adding a “bacon” category tonight, but the thought of most of our meals fitting into that category kind of makes me sick! I adapted this recipe from Guy Fieri. As always, I made it for the first time exactly as stated, but it’s slowly morphed into an easier, less fuss meal.
Bacon & Tomato Pasta (serves 2-4)
Ingredients:
1 small onion, diced
1 1/2 tablespoons olive oil
3 cloves garlic, minced
1 can of italian diced tomatoes, not drained
2 tsp dried basil
1/2 tsp red pepper flakes
1/2 lb bacon, cooked until extra crispy and crumbled
spaghetti, cooked and drained
Parmesan cheese, for topping
In a shallow saucepan or large frying pan, saute onions in olive oil until soft. Add garlic and cook for about a minute, until fragrant. Add tomatoes, basil and red pepper flakes. Cook for another 5 minutes on low heat. Mix in bacon crumbles and serve tomato mix over cooked spaghetti. Top with a sprinkle of Parmesan cheese.
