Taco Salads

*Pardon the picture, we were more concerned with eating than photography after our meeting*

Yay- HOA meeting tonight at 6! That would be exactly when I would be making dinner on a normal night, so I needed something I could make ahead and reheat when we were done. Enter: Taco Salad. You can make the beef & beans ahead of time and assemble the rest when you are ready to eat.

Taco Salad (Serves 4-6)

1 pound 97% lean ground beef
1 can of pinto or black beans (rinsed and drained)
1/3-1/2 cup water (depending on your preference)
2 tbs chili powder
1 tsp garlic powder
1 tsp cumin
1 tsp onion powder
¼ tsp red pepper flakes
¼ tsp cayenne pepper
romaine lettuce
tomatoes
avocados
black olives
mexican blend cheese
ranch salsa (1 part ranch dressing, 1 part salsa- optional)
quesadilla wedges

Brown ground beef in large skillet and drain fat. Add spices, water and beans. Mix well and let simmer for 5 minutes.

Serve meat on top of lettuce. Add tomatoes, avocados, black olives and cheese. If desired, add ranch salsa drizzle.

Garnish with quesadilla wedges. Bon Appetit!
