We had every intention to have a healthy meal tonight, but some how we ended up making fried buffalo chicken sandwiches…whoops. I did serve it with carrot sticks (and ranch) so I guess it wasn’t so bad. Right?
Buffalo Chicken Sandwiches (Serves 2)
1 boneless, skinless chicken breast cut into tender sized strips
1 cup buttermilk
1 tbs hot sauce
1 cup of flour
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
canola oil for frying
buffalo sauce (suggested: Frank’s Red Hot)
Preheat oil to 350F
In a shallow bowl, mix together buttermilk and 1 tbs hot sauce. In a separate shallow bowl mix together flour, onion powder, garlic powder and cayenne pepper.
Dredge chicken in flour followed by buttermilk and flour again. Carefully place 3-4 pieces of chicken in the oil and cook for approximately 5 minutes per side. I always check the biggest piece to make sure it’s cook through. Place fried chicken on paper towels to absorb excess oil. Toss chicken in buffalo sauce.
To assemble sandwiches place lettuce, tomato and buffalo chicken on hot, toasted ciabatta.
